- Sift together the flour, sugar, baking soda, and cinnamon in a large bowl.
- Add in the oil, eggs, and vanilla extract to the dry ingredients and beat well until thoroughly combined.
- Gently fold in the pureed carrots, shredded coconut, and drained crushed pineapple until just combined. Be careful not to overmix.
- Pour the batter evenly into two greased and floured 8-inch round cake pans.
